Leek and Potato Soup

From my “Irish Pub Cooking” cookbook by LoveFood that I picked up from Five Below. It doesn’t take long to make over the stove-top but you could easily use this recipe for a crock pot as well.

4 Tbs butter
1 Onion, chopped
3 Leeks. sliced
2 Potatoes, cubed
3.5 Cups Vegetable Stock
Salt & Pepper
(garnish with chives and light cream – optional)

Step 1. Melt the butter and add the onion, leeks, and potatoes. Cook them but don’t let them brown. Pour in the stock and bring to boil then reduce the heat and let simmer for 15 minutes

Step 2.  Use immersion blender, food processor or blender to blend the soup until smooth.
